Sugar Cookie Truffles

2 dozen (ish) sugar cookies
4oz. cream cheese at room temperature
White chocolate for melting and dipping.
Colorful sprinkles for decorating

Place cookies in a food processor and pulse until cookies are all crumbled up.  Or put in zip lock bag and crush. Place crumbs in bowl. Add cream cheese and thoroughly mix.
Form small balls cookie and roll around in your hands to fully form a smooth ball.  Place on waxed paper lined baking sheet.  Refrigerate sheet of balls for 30 min.
Melt white chocolate.  Dip each ball in white chocolate, coating fully and place back on wax paper lined sheet, or if you don't like all the richness of white chocolate, drizzle it instead. Sprinkle on the decorations after each one, before the chocolate hardens.
Allow to harden and then serve.  Store in refrigerator.
